Protect yourself during the FLU Season

PUT THE SOUP ON!

Chicken soup was apparently established as a cold and flu remedy about 800 years ago when Maimonides, court physician to Saladin, the caliph of Egypt, first recommended chicken soup. Throughout time, it has thought to be effective against the spread of flu when significant amounts of onion and garlic are added to it. Researchers have found that hot chicken soup itself seems to increase the flow of mucus. Although researchers aren't sure whether it's the soup's aroma or the taste, they've found that chicken soup helps make your nose run, shortening the transit time which germs spend inside your nose and body. The faster you can move germs out of your system the faster you recuperate.

FLUID UP!

Help protect yourself by drinking lots of liquids. Fluids apparently help mucus traps germ and eliminate them through your nasal passages or pass them on  down to the stomach, where your own powerful digestive acids can destroy them.

Normally, about six to eight cups of water, milk, juice, lemonade or soup a day is enough to meet your liquid quota, but you can easily lose a quart or more of fluids a day when you're sick.
The recommendation: DOUBLE YOUR FLUIDS and avoid alcohol, which depletes your body of immune boosting nutrients and causes dehydration.

GARLIC UP

Studies with laboratory animals showed that garlic actually helps protect them from flu viruses while boosting their production of immune system antibodies. Preliminary studies showed that people who ate garlic for three weeks had enhanced immune system activity.

PUT ON THE CHILI

Spicy foods containing chili powder, hot peppers, and similar warming spices will start your mucus flowing, which can help open your nose, perhaps ease your breathing and, as a natural expectorant, make your cough more productive, experts say. GET AS MUCH REST AS YOU CAN. Don't overburden your system by causing it to fight for oxygen. Nap, sleep, rest, watch some good, old classic movies---preferably comedies.

Anti Flu (Get Well) Chicken Soup

Place two chicken breasts (or a whole chicken) cut into bite sized morsels in a large pot with three quarts of water.  Season with two bay leaves, pepper corns, salt, and black pepper to taste, and cook for approximately an hour or until chicken is done.Then add about 6 cups water, 15 to twenty cloves of fresh diced garlic, two or three chopped onions, two to four chopped bell bell peppers, four or five stalks of diced celery.  Salt and pepper to taste.* Cook an additional twenty minutes and add a package of noodles and cook 10 to 15 minutes more or until noodles are done. Serve immediately.
Added Touch: Bake an entire head of garlic timed to finish when the soup is ready to serve. Prepare fresh toast. Spread the baked garlic on the toast and serve with the hot soup .... of course its hard to beat a silver tureen for serving the soup, just for a little extra flair (and, of course, germs cannot survive on silver).

*Additional salt may be required if influenza or infection is present to prevent dehydration and swelling.

The Chili Cure (Dot Milford's Famous Chili)

( Preparing fresh ingredients will always produce a better and more nutritious product but, when you can't do it all from scratch, this is a very delectable dish, perfect for cold and flu sufferers)
      2 lbs fresh ground hamburger
      3 oz.  chili powder 
      1 teaspoon of cumin 
      Dash of garlic 
      1/3 bottle of ketchup 
      2 cans Ranch Style Beans 
      2 tablespoons flour 
      2 tablespoons cornmeal 
      1 teaspoon salt 
      1 can of water 
Brown beef & drain grease. Add spices, beans, and  ketchup. Dissolve flour and 
cornmeal in can of water and add to other ingredients & simmer.

Added Touch: Fresh jalapeño cornbread, roasted garlic, with fresh red and yellow bell pepper slices on the side turn this simple chili into a delectable dish.
